Vegan Sugar Cookies

Sugar Cookies

With crispy edges and a soft center, these vegan sugar cookies are the best.

  • 1 cup and 2 tablespoons of flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup of Brown sugar
  • 1/4 cup of sugar
  • 1/2 cup of vegan butter or plant oil [Room temperature]
  • 3 tablespoons of chickpea aquafaba or chickpea can juice
  • 2 teaspoons of vanilla extract
  • 1 teaspoon lemon extract
  1. Preheat oven to 350 degrees
  2. Combine the brown and white sugar with the butter and mix well into a bowl
  3. Mix the aquafaba, baking powder, baking soda, and salt into the bowl
  4. Add vanilla extract and lemon extract to the bowl
  5. Mix the flour to the bowl until it is well incorporated
  6. Scoop a teaspoon full of batter and roll it into a ball
  7. Place the balls of cookie dough an inch apart on a cookie sheet
  8. Place cookies in the oven for 10-13 minutes
