
Make the perfect fluffy vegan omelet that tastes like an egg.
This recipe makes two omelets
- 1/4 cup of Chickpea flour
- 1/2 cup of chickpea aquafaba or chickpea can juice
- 1/2 teaspoon of Black Salt (Optional)
- 4 sweet peppers
- 1/4 onion
- 4 button mushrooms
- 1/4 cup of vegan cheese
- Parsley for garnish
- 2 tablespoons of avocado oil
- a pinch of Paprika
- a pinch of Sage
- Chop the onion, mushrooms, and peppers
- Whip the aquafaba with a hand mixer until it foam to twice the volume
- Combine the chickpea flour with the aquafaba and Black Salt
- Pour the avocado oil into a skillet on medium heat
- Shake the sage and paprika on the mixture before it bubbles
- Add the chopped veggies and the vegan cheese to the center of the omelet
- Fold the omelet and cover it
- Cook until light brown
- Repeat for the second omelet
