Vegan Omelet

Make the perfect fluffy vegan omelet that tastes like an egg.

This recipe makes two omelets

  • 1/4 cup of Chickpea flour
  • 1/2 cup of chickpea aquafaba or chickpea can juice
  • 1/2 teaspoon of Black Salt (Optional)
  • 4 sweet peppers
  • 1/4 onion
  • 4 button mushrooms
  • 1/4 cup of vegan cheese
  • Parsley for garnish
  • 2 tablespoons of avocado oil
  • a pinch of Paprika
  • a pinch of Sage
  1. Chop the onion, mushrooms, and peppers
  2. Whip the aquafaba with a hand mixer until it foam to twice the volume
  3. Combine the chickpea flour with the aquafaba and Black Salt
  4. Pour the avocado oil into a skillet on medium heat
  5. Shake the sage and paprika on the mixture before it bubbles
  6. Add the chopped veggies and the vegan cheese to the center of the omelet
  7. Fold the omelet and cover it
  8. Cook until light brown
  9. Repeat for the second omelet
