Vegan Pecan Pie

Make a vegan pecan pie without processed sugar or corn syrup!

  • 1.5 cups of pecans
  • 1 cup of Yam or Sweet potato (About half a sweet potato)
  • 1/4 cup of avocado oil
  • 1/4 cup of unsweetened vanilla almond milk
  • 1.5 cups maple syrup
  • 1 teaspoon of vanilla extract
  • pinch of salt
  • 1/4 cup of arrowroot powder
  • Vegan Pie Crust of your choice
  1. Roast the Pecan for 15 minutes at 350 degrees Fahrenheit.
  2. Chop the sweet potato into small chunks
  3. Steam the Sweet potato until soft (Use instant steam setting with half a cup of water)
  4. Mix the arrowroot powder and salt with the sweet potato in a Glass or non-heat sensitive bowl
  5. Start baking your pie crust according to directions
  6. Place 1/4 of the pecans on the pie crust
  7. Use a non-stick pan and mix the maple syrup, avocado oil, vanilla extract, and almond milk.
  8. Use a metal whisk to stir the mix on high for 10 minutes. Allow the mix to boil and for at least 5 minutes. Whisk vigorously for the best texture.
  9. Pour the filling mix into the sweet potato, arrowroot, and salt mixture and whisk until there is a homogenous mixture 
  10. Pour the combined mixture on top of the pie crust.
  11. Arrange the pecan in your preferred style
