
Beyond Stuffed Bell Peppers are delicious and beyond meaty.

Ingredients:
- 6 large bell peppers
- 1/2 Cup Ground Beyond Beef
- 50g Tomato Sauce
- 100g Mushrooms
- 1/2 Tbsp Onion
- 1 Tbsp Rosemary
- 2 Tbsp Parsley
- 45g Nutritional Yeast
- 1/2 Cup White Rice (Dry)

Instructions
- Preheat the oven to 350 degrees Fahrenheit
- Cook white rice according to the instruction on the package.
- While the rice is cooking in a non-stick pan saute the onions and mushrooms until softened on medium heat.
- add the ground beyond beef, rosemary, and parsley to the pan. Cook until brown.
- Add the cooked rice, tomato sauce, and nutritional yeast to the pan and mix well
- Hollow out the bell peppers by cutting the tops off and removing the seeds.
- Stuff the bell pepper with the beef and rice mixture.
- Place the bell peppers in a muffin tin and cook in the oven for 30 minutes.
