Stuffed Peppers

Beyond Stuffed Bell Peppers are delicious and beyond meaty.

Cook Time: 45 Minutes

Calories: 330 calories per serving 16 oz *

Ingredients:

  • 6 large bell peppers
  • 1/2 Cup Ground Beyond Beef
  • 50g Tomato Sauce
  • 100g Mushrooms
  • 1/2 Tbsp Onion
  • 1 Tbsp Rosemary
  • 2 Tbsp Parsley
  • 45g Nutritional Yeast
  • 1/2 Cup White Rice (Dry)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Cook white rice according to the instruction on the package.
  3. While the rice is cooking in a non-stick pan saute the onions and mushrooms until softened on medium heat.
  4. add the ground beyond beef, rosemary, and parsley to the pan. Cook until brown.
  5. Add the cooked rice, tomato sauce, and nutritional yeast to the pan and mix well
  6. Hollow out the bell peppers by cutting the tops off and removing the seeds.
  7. Stuff the bell pepper with the beef and rice mixture.
  8. Place the bell peppers in a muffin tin and cook in the oven for 30 minutes.
